Style

Similar in style to traditional Champagne.  Fermented in this bottle. Extended bottle aging in the presence of yeast provides complex fruity-yeasty bouquet and creamy mouthfeel. After yeast disgorgement a very small dosage  was added to balance acidity.

Aroma

Classic yeasty, biscuit-like bouquet with bright strawberry, hay, and cacao.

Taste

Bright acid, creamy texture, long complex finish.
